Stuffed Portobello Mushrooms

Ingredients :

portobello mushrooms
brown rice
olive oil
green onions
sea salt
fresh cracked pepper
shredded cheese (I used a fiesta mix)

Start your brown rice and while that is cooking, prepare your mushrooms and mixture - set your oven to 350

Cut the stems and spoon out all the insides of the mushrooms to make little "mushroom bowls"

In your pan, pour a little olive oil in the bottom and place the mushroom caps/bowls in the pan -

drizzle a little olive oil on your mushroom caps as well.

Chop up all the mushroom 'insides' that you have from the mushroom caps, dice green onions, tomatoes, and mix them in a bowl. When your brown rice is ready, add as much as you think necessary to the veggie mix you have in your bowl. I added spicy sea salt, fresh cracked pepper ...

Now spoon your mixture into the mushroom bowls and stuff 'em well! Sprinkle as much shredded cheese as you want on top of the mushrooms and place in oven for 10 - 15 minutes. Voila! It is GOOD.
